Restaurant Style Spinach Dip

The one I make for gatherings. It’s a hit at home too. Party size first, family size under that. Alfredo can be store-bought. Snack, with chips or fried pitas.

Party size

Alfredo — skip if using store-bought

- ½ cup butter

- 6 to 7 cloves garlic, minced

- ⅜ cup all-purpose flour

- 3 cups heavy cream

- 3 cups milk

- 2 cups freshly grated Parmesan

- 2 cups freshly grated pecorino Romano

- Salt & pepper

Dip

- 6 to 7 cups Alfredo

- 2 tablespoons butter

- 3 packs cream cheese, 8 ounces each, softened

- 100 grams roasted red peppers

- 1 medium red onion, chopped

- 2 to 3 dashes Worcestershire

- 1227 grams spinach

- 1 tablespoon garlic powder

- 1 tablespoon onion powder

- 4½ tablespoons Cajun seasoning

- 18 grams hot sauce

- 4 green onions

- 170 grams artichoke hearts

- 400 grams cheddar, shredded

- 400 grams mozzarella, shredded

Alfredo

Melt the butter on medium. Sauté the garlic 1 to 2 minutes. Stir in the flour & cook until it smells nutty. Add the cream, then the milk. Whisk until it thickens. Off the heat, add both cheeses. Back on the heat until melted. Salt & pepper.

Dip

Melt 1 tablespoon butter. Wash, dry, & roughly chop the spinach. Sauté until no liquid is left. Add the garlic powder, onion powder, salt, & pepper. Set aside.

In the same pan, melt the other tablespoon of butter. Cook the onion with salt & pepper until soft & translucent.

Chop the green onions, artichokes, & roasted peppers.

Mix the onions, spinach, peppers, artichokes, & green onions into the cream cheese. Add the hot sauce, Alfredo, Worcestershire, & Cajun. Stir in both cheeses.

Pour into pans. Mine took one large & one small. Bake at 350°F for 25 to 35 minutes. Broil on low 5 to 8 minutes. Watch it.

Serve with fried pitas or corn chips.
