Chocolate Covered Cranberries

Powdered Sugar cranberries dipped in chocolate. Snack or dessert.

Ingredients

- 1 bag cranberries

- ½ cup brown sugar

- ½ cup water

- ½ teaspoon vanilla

- 1⅓ cups chocolate chips

- 1 cup powdered sugar, plus ¼ cup for the final roll

Method

Pick through the cranberries. Wash, dry, & throw out the bad ones.

In a pot, cook the brown sugar, water, & vanilla on medium about 9 minutes, until it coats a spoon & a finger line stays put.

Stir in the cranberries until every berry is coated. Scoop them out & let the extra syrup drain. Set on parchment or a cooling rack. Cool 40 minutes to 1 hour. They’ll be sticky.

Put 1 cup powdered sugar in a bowl. Roll the cranberries in it until covered. Chill 1 to 2 hours so the sugar hardens.

Melt the chocolate chips in 30-second bursts, stirring each time, until smooth.

Drop the sugared cranberries in the chocolate. Let the extra drip off. Set them back on the parchment. Dust with leftover powdered sugar.

When the chocolate is hard, roll them carefully in the last ¼ cup powdered sugar. Don’t squish them. Chill, then eat.
